    "default": "Shake all of the ingredients in a cocktail shaker with cubed ice and strain into a freezing cold martini glass then devour like you've just been diagnosed with scurvy. You may choose to garnish it with a wedge of lime, but I find one an unnecessary distraction."

    "default": "In 1867 it became mandatory for British ships to carry vitamin C-rich lime juice rations to protect sailors from scurvy. The problem was that the juice tended to go off after a week or two sitting in a barrel. A Scotsman, Lauchlan Rose, developed a new method of preserving the juice and Rose's Lime Cordial was born—the world's first concentrated fruit juice. There's an elephant in the room among bartenders when it comes to mixing a Gimlet, and that is whether to use fresh lime and sugar, or lime cordial? The original recipe calls for Rose's lime cordial, but as the use of cordial was driven more by circumstance than by the pursuit of deliciousness it's fair to consider a fresh lime juice an upgrade. But this is beginning to sound a lot like a \"Gin Daiquiri,\" and in the Gimlet we have a cocktail that deserves its own name and its own terms and conditions. For me this is one occasion where nostalgia wins the day, and I'm happy to sacrifice a little freshness in a Gimlet to know that I am drinking a simple union of ingredients that have remained relatively unchanged for over 250 years."
