    "default": "The Harvard is unquestionably the lesser known of the dark spirit, vermouth, and bitters family of cocktails as it's the Manhattan and Rob Roy that sit at the ends of that particular table. But—and I fully appreciate that this is quite a bold statement—it might just be the shining star of the household. Cognac is one of the original mixing spirits of mid-19th-century America, and the Harvard first found its name in ink in George J. Kappeler's 1895 book, Modern American Drinks. Kappeler's recipe called for sugar, Angostura Bitters (3 dashes), equal parts Italian Vermouth, and brandy as well as selzer water. Naturally I have tried the drink this way and that, and I found the addition of fizzy water to be a bit too much of a distraction from the elegant union of grape spirit and grape wine in a glass. The more traditional garnish is an orange zest but Manhattan fans can opt for a cocktail cherry if they wish."
