    "default": "The Holland House cocktail is like a missing link between between a bunch of other classic cocktails: the Martinez, Aviation, and Corpse Reviver. It's made with genever, however, which is why many bartenders describe it as a malty version of the Aviation cocktail. Genever is a clear, botanically rich malted grain spirit that can only be made in Holland or Belgium. When choosing a genever, go for a nice oude genever or corenwijn, which will really stand up to the lemon and liqueur, while the vermouth offers some welcome dilution and finesse to the ensemble."
