  "history": {
    "key": "cocktail.margarita.history",
    "default": "Margaritas can be blended but shaking is where it's really at. The good news is that a classic 2:1:1 ratio is a fairly reliable one-size-fits-all that can be applied to virtually any tequila/curaçao/lime combination, regardless of brand. Lime and tequila have a powerful affinity and the dry orange note from the Curaçao does a great job of lifting the vegetal, earthy characteristics of a good tequila. The salt buffers the acidity of the lime, actually lessening its tongue-shrivelling effect. Use flakes and not table salt, which is far too fine and will make an otherwise pleasing drink taste like a fisherman's sock."
