    "default": "This drink needs to be cold—like, really cold. If possible use glasses from the freezer and make sure that your ice is dry. Fill a highball glass with chunks of ice; add the gin, lime, and salt, then give it a good stir with a barspoon. While still stirring, pour the club soda in, leaving a small space at the top. Add more cubed ice, stir some more, then finish with a wedge of lime."

    "default": "The best way to make a rickey is with little or no sugar, and instead using a pinch of salt. Salt has the effect of buffering the acidity of the lime juice (in the same way as sugar), but also exposing some minerality from the gin and lime oil. Removing the sugar also makes the drink less cloying and circumvents that nauseating sugar overload that typically happens after about your third or fourth sour/fizz drink."
