    "default": "Grab two old fashioned glasses. Fill one with crushed ice and add the absinthe. Stir. In the other glass, crush the sugar cube with the bitters until dissolved, then add the Cognac and some cubed ice and stir for 30 seconds. Chuck away the contents of the absinthe glass, ensuring you remove all fragments of the ice. (This might seem wasteful, but the absinthe will be entirely noticeable in the final drink.) Finally, strain the mixture into the empty absinthe-washed rocks glass. Garnish with a little twist of lemon zest."
