    "default": "In the 1930s Walter Bergeron was the head bartender at the Carousel Bar in The Commercial, a fancy hotel in the French Quarter of New Orleans. His cocktail the Vieux Carré featured in the 1937 publication Famous New Orleans Drinks and How to Mix 'em. In structure, the drink sits somewhere between a Manhattan and a Sazerac. There are some provocative pairings of ingredients here though: rye does battle with cognac and two varieties of bitters have a face-off. In many ways it is both a Manhattan and a Sazerac in the same glass, where the absinthe has been replaced with Benedictine liqueur. That last part is a critical element to the success of the Vieux Carré, however, as it brings sweetness and harmonizes the floral, fruity cognac with the spice of the rye. I urge you to try it."
